SWEDISH PANCAKES WITH HUCKLEBERRY SAUCE Yield: 4 Servings Pancakes
1 Cup Flour
1/2 Teaspoon Salt Beat eggs, add remaining ingredients. Bake in buttered IRON skillet, using enough batter to cover bottom of skillet thinly. Brown on each side, roll up and keep warm until all are cooked. Huckleberry Sauce 2 Slices Bread
1/3 Cup Sugar Friday night prepare a lunch. Peanut-butter-and-gjetost is only appropriate if you will be picking huckleberries with a 70-year-old Norwegian. Put beer in cooler and get a good night's rest. Saturday morning, if the 70-year-old Norwegian is picking you up at 7a.m., be on the steps outside,with lunch, beer, and Skin-So-Soft, by 6:45 a.m. (Don't forget your bucket!) When you get to the mountains (or wherever you are picking huckleberries), put on a small amount of Skin-So-Soft to discourage the bees and mosquitoes. When you get home, wash berries, store till ready for use. When ready, in a saucepan, combine berries, sugar, cornstarch, lemon juice and water. Cook over medium heat until thickened. Serve warm or cool. Great on ice cream and cheesecake too! |
